This quick and easy apple crisp recipe is perfect for weeknight dessert or breakfast for two. Chunks of granny smiths are tossed with cinnamon and cloves, and topped with a bourbon and oat struesel.

Apple Filling
1-2Granny Smith Applesdiced into half inch pieces
1TbspLemon Juice
1TbspBrown Sugar

Streusel Topping
3TbspFlour

Instructions
Preheat the oven to 350F. Mix all the filling ingredients except the apples in a medium bowl until well-combined. Add the apple chunks, and toss until coated.
In a small bowl, whisk together the dry ingredients for the topping (flour, sugar, oats, cinnamon). In a separate dish, mix the bourbon into the melted butter. Combine the wet and dry, and mix until combined.
Split the apples between two ramekins, and top evenly with the streusel. Bake for 30-35 minutes, until the apples are tender and bubbling, and the topping is browned and dry.
Notes
If you're not a huge fan of cloves, you can drop that down to 1/8 tsp, or leave out completely.
If you leave out the bourbon, your streusel may be a little drier. You can add a splash of vanilla extract. Or leave out the last Tbsp of flour, and then add slowly after mixing to achieve your desired texture.
