I have been a little obsessed with smoothies lately. It’s such an easy and quick breakfast during the work week, and the hardest part is remembering to clean to blender each time! I’ve been experimenting with some fun flavor combinations and found some really tasty smoothies. Today, I’m sharing a fun and healthy version of a coffee shop favorite with this vegan chai latte green smoothie.

I am a major chai lover (here’s my favorite). I’ve been drinking chai lattes hot and iced at coffee shops for as long as I can remember, so it was a natural jump to incorporate one of my favorite morning beverages into a smoothie. At first, I was thinking of trying a hot smoothie here, but the flavors work nicely cold as well, so I stuck with that.

Smoothies have become one of my favorite ways to get some vegetables into my diet early in the day. This green smoothie features spinach. I can never believe how much spinach you can cram into the blender without tasting it at all. It seriously blows my mind. But I promise, other than the color, you wouldn’t know this smoothie is stuffed with leafy greens.

To make my smoothies plant-based, I like using coconut milk, coconut sugar, and coconut milk yogurt. If you’re more into nut or oat milk or a different plant-based yogurt, you can try those instead. I bet it will still be delicious! If you want dairy in your smoothie, feel free to sub those out with regular milk and yogurt.

For texture, it’s all about frozen bananas and almond butter. I’ve been randomly adding a spoonful of almond butter to smoothies lately, and it really does and a nice creaminess. As for bananas, I buy a whole bunch in the beginning of the week, and store them in the freezer. The best way is to peel and cut them in half. That way they’ll fit better in your blender.

This recipe makes one large serving that can be a meal, or two smaller servings to go with something else (like apple butter brioche cinnamon rolls). I like drinking it with a reusable straw, to feel like I’m being healthy to myself and the planet.

Vegan Chai Latte Green Smoothie

Get your greens and morning chai all together in this plant-based green smoothie, featuring chai tea, coconut milk, cinnamon, and almond butter.

Ingredients

  • 1/4 cup Water
  • 1 Chai Tea Bag
  • 3/4 cup Coconut Milk plus extra if needed
  • 1 Banana frozen
  • 1/2 cup Coconut Milk Yogurt
  • 1 cup Spinach
  • 1 Tbsp Coconut Sugar
  • 1 Tbsp Almond Butter
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla

Instructions

  • Add the tea bag and 1/4 cup boiling water to a heat-safe one cup measuring cup, and let steep for 5-10 minutes. Squeeze out the tea bag and discard. Add the coconut milk until you have 1 cup of liquid, and stir until combined.
  • Add the tea mixture and the other ingredients to a high speed blender. Mix until smooth and serve immediately.

  2. I love to start the morning with a smoothie but sometimes get into a rut of making the same thing over and over again. I love that this one is vegan/plant-based because I try to eat as plant-based as possible. And chai latte…yum!

    1. I have definitely been in that rut, and that’s why I like to have a bunch of recipes and the supplies on hand! I also have been trying to eat more plant-based, and I am loving discovering new flavors within that.
