When it came to this list of egg dishes for breakfast, I knew that I wanted to include plenty of different styles and cuisines, but keep it all veggie. Signature Dishes
Pick one of these favorites if you really want to make an impressive brunch. They will each look stunning on your breakfast table and are sure to become a new go-to.
Frittatas
Frittata is an extra fancy term for one of the simplest egg dishes you can make. You can think of them as an unfolded omelet, but fluffier, or a crustless quiche, but with the less custardy filling. Each of these options will hit that sweet spot, and are perfect to make in advance.
Small Bites
Whether you are cooking for just yourself or looking for a cute egg dish to act as an appetizer, you can’t go wrong with a bite-sized selection. These recipes look great arranged on a platter in the middle of a table and taste delicious when you need a quick bite on the go.

Omelets & Scrambles
Go for a classic stovetop breakfast with one of these vegetable-filled options. Whether you are into the light and fluffy layers of an omelet, or the mishmash of flavors in every bite with a scramble, you are sure to love all of these.
Shakshuka-Style
One of my favorite ways to have eggs is poached in a tomato base, with plenty of spice and seasoning. Shakshuka originated in North Africa, but these days you can find so many flavor variations that involve this method of baking eggs.
